Abstract

he present investigation proposes to determine the feasibility for the creation of a rustic-style restaurant in the Irene hotel located in the Cañar canton in order to meet the gastronomic needs of demanding customers. The research that was applied is descriptive and exploratory, which was carried out using bibliographic sources, field research and instruments as a survey, managing to gather necessary information that allowed obtaining data to prepare the projections of the supply, demand and demand unsatisfied in the Study Market The capacity, location, standard recipes, fixed asset requirements and design of the company was carried out during the Technical Study. In the Environmental Study, a matrix was made with mitigation measures to reduce pollution to the environment by the implementation. In the Legal Administrative Study we determine how the company is constituted, organization chart, recruitment, selection and hiring of personnel. Through the financial economic study, an investment of $ 31,017.51 ​​is determined, which $ 23,200 financed with a bank loan at 12% interest, suppliers $ 6,290.40 and own capital $ 1,527.11.
