Abstract : In the Food Processing Laboratory of the School of livestock Sciences, of the Escuela Superior Politécnica de Chimborazo, Chimborazo province, different levels of chitosan were applied (1%, 1.5%, 2%) in front of control treatment in the post-harvest management of cherimoya in order to prolong the useful life of the fruit, we evaluate the physical-chemical characteristics (pH, texture and acidity), sensory (color, smell, taste) and microbiological (molds and yeasts, fecal Coliforms, Salmonella, Escherichia coli, Staphylococcus aureus). We used 120 cherimoyas (Annona cherimola) distributed in four treatments with 10 experimental units in each one. The analyzes were carried out in the food and microbiology laboratory. A completely random design was used for the statiscal analysis. The results were analyzed by analysis of variance (ADEVA) and mean separation according to Tukey (P <0.05). Establishing that the variables pH and texture showed no significant differences between the treatments however the best results are achieved with treatment T3 (2% chitosan) because these characteristics are preserved during the time of storage, in the parameter acidity from day 6 of storage showed differences significant between the measure of the treatments but the lower loss of acidity was achieved with the treatment T3. The highest taste, color and odor scores are achieved by applying 2% of chitosan. Total inhibition was achieved in terms of bacterial growth during the experimentation time unlike molds and yeasts, that reported growth from day 9 of storage. The benefit ratio obtained a higher profitability with the control treatment due to the cost of the chitosan but with the limitation that the useful life is less. In general, it was shown that at higher levels of chitosan, lower microbial growth and thus greater shelf life of the cherimoya. It recommend the use of chitosan in the post-harvest handling of other fruits especially those that characterized by having a very short shelf life.
Resumen : En el laboratorio de Procesamiento de alimentos de la Facultad de Ciencias Pecuarias, de la Escuela Superior Politécnica de Chimborazo, provincia de Chimborazo, se aplicó distintos niveles de quitosano (1%; 1,5%; 2%) frente a un tratamiento testigo en el manejo poscosecha de la chirimoya con el objetivo de prolongar la vida útil de la fruta, evaluamos las características físico-químicas (pH, Textura y acidez), sensoriales (color, olor, sabor) y microbiológicas (mohos y levaduras, Coliformes fecales, Salmonella, Escherichia coli, Staphylococcus aureus). Utilizamos 120 chirimoyas (Annona cherimola) distribuidas en cuatro tratamientos con 10 unidades experimentales en cada uno. Los análisis se realizaron en el laboratorio de alimentos y microbiología. Para el análisis estadístico se utilizó un diseño completamente al Azar. Los resultados fueron analizados mediante el análisis de varianza (ADEVA) y separación de medias según Tukey (P<0,05). Estableciendo que las variables pH y textura no mostraron diferencias significativas entre los tratamientos sin embargo los mejores resultados se consigue con el tratamiento T3 (2% de quitosano) debido a que conservó estas características durante el tiempo de almacenamiento, en el parámetro acidez a partir del día 6 de almacenamiento mostró diferencias significativas entre las medias de los tratamientos pero la menor pérdida de acidez se logró con el tratamiento T3. Las mayores puntuaciones de sabor, color y olor se consiguen al aplicar 2% de quitosano. Se consiguió inhibición total en cuanto a crecimiento de bacterias durante los 12 días de almacenamiento a diferencia de mohos y levaduras que reportó crecimiento microbiano a partir del día 9 de almacenamiento. La relación beneficio obtuvo una mayor rentabilidad con el tratamiento testigo debido al costo del quitosano pero con la limitante de que la vida útil es menor. De manera general se demostró que a mayores niveles de quitosano menor crecimiento microbiano y por ende mayor vida de anaquel de la chirimoya. Recomendamos la utilización de quitosano en el manejo poscosecha de otras frutas especialmente las que se caracterizan por tener una vida de anaquel muy corta.
