Diseño de un plan agregado de producción para mejorar la productividad en las líneas de harinas y granos en NUTRISIM

Abstract

The purpose of this work was to design a production planning strategy for the flour and grain lines of NUTRISIM S.C. The study began by analyzing the information of the current production system, collecting historical quarterly sales data. Afterward, the Winter and Holt models were designed for the calculation of forecasts, continuing with the study of times by applying the timing method to find the production capacity of the plant, then the aggregate production plan was designed by applying the persecution strategy and leveling to reduce production costs, inventory, and improve the efficiency of the operators, thus reaching the Master Production Schedule (MPS) to organize when, how much and what to produce, finally representing the results in the Gantt diagram for better planning of the products studied. The results obtained in 2021 were the reduction of the inventory level in the machica by 94.85%, in black bean by 16.20%, in pearl barley by 89.05%, in split morocho by 93.38%; The yield of the operators also increased from 74% to 95% in pearl barley from July to September and from October to December from 57% to 85% and in barley rice is increased from 76% to 91% from July to September and from October to December it increased from 87% to 95%. It was concluded that through the application of the Winter forecast method and the strategy of the aggregate chase plan, satisfactory results were obtained in the research. It was recommended to have a great variety of historical sales data due to the fluctuating demands that exist, to verify that at the moment of graphing the Gantt diagram the production lines do not coincide
