Abstract : "This investigation deals with the anti-bacterial effect of essential oils of wild marjoram and thyme as natural preservers, to reduce the microbial load during the chicken breast storage. The methods used in the essay were inductive-deductive and scientific- experiemental. The essay microorganisms were Salmonella spp. and proteolitic ones; Sercening, Minimum Bactericidal Concentration in vivo and death time in vitro and in situ test were applicd. The Screening determined the anti-microbial activity with 100% concentrations without diluting. The minimum bactericidal concentration against the Salmonella spp. was 1.56%. the most effective in vitro treatment against Salmonella spp. was obtained with thyme essential oil in total concentration while the wild marjoram essential vil presented a minimum inhibition. In the death time, the efficacy of the anti-bacterial activity of the thyme oil was determined as it presented a significant reduction of the Salmonella spp. the in situ essays showed that the thyme essential oil in he chicken breast storage at (4*C) refrigeration temperature up to 48 hours, was the most effective treatment to reduce the bacterial contamination and the loss of meat quality characteristics, attaining a better-quality and contamination-free product. This is why it is recommended to use the thyme oil in the chicken meat as a natural alternative of the synthetic anti-bacterial products to control its contamination."
Resumen : El objetivo de la presente investigación fue evaluar el efecto antibacteriano de los aceites esenciales de orégano y tomillo como conservantes naturales, con el propósito de reducir la carga microbiana durante el almacenamiento de la pechuga de pollo. Los métodos utilizados en el ensayo fueron inductivo-deductivos y científico-experimentales. Los microorganismos de ensayo fueron Samonella spp y microorganismos proteolíticos; se aplicaron pruebas de Screening, Concentración Mínima Bactericida“in vivo” y tiempo de muerte “in vitro” e “in situ”. El Screening determinó actividad antimicrobiana con concentaciones al 100 % sin diluir. La concentración mínima bactericida frente a Salmonella spp fue de 1.56%. In vitro, el tratamiento más efectivo frente Salmonella spp. fue obtenido con el aceite esencial detomillo en concentración total mientras que el aceite esencial de orégano presentó una inhibición mínima.En el tiempo de muerte se determinó la eficacia de la actividad antibacteriana del aceite de tomillo ya que presentó una reducción significativa de Salmonella spp. Los ensayos“in situ” mostraron que el aceite esencial de tomillo en el almacenamiento de la pechuga de pollo a temperatura de refrigeración (4ºC) hasta 48 horas, fue el tratamiento más efectivo para reducir la contaminación bacteriana y la pérdida de las características de calidad de la carne, logrando dar un producto de mejor calidad y libre de contaminación. Por lo que se recomienda el uso de los aceites esenciales en carne de pollo como una alternativa natural a los antibacterianos sintéticos para controlar la contaminación de la misma.
