Abstract : "Presently investigation work was carried out the nutrtional evaluation of the blackberry (Rubus glaucus B.) fresh and debydrated, determination the quantity of anthocyanes and vitamin C as indicator of efficiency of the process of dehydration, with the ending of reducing to the minimum the loss of mutritious and life larger utility. Utility fresh blackberry, drier, HPLC, utiliting method scientific, inductive, analytic - synthetic and experiment. To determine the good conditions of drying I take three temperatures, itis at 80*C so the blackberry presented a concentration of 115.63 mg/100g of anthocyanes and 402.71 mg/100g of vitamin C. While there are 90*C with a concentration of 74.04 mg/100g of anthocyanes and 65.81 mg/100g of vitamin C and at 70*C a concentration of 64.52 mg/100g and 7.58 mg/100g of vitamin C. Besides was also carried out the physical analysis, chemist and microbiologic of the fresh and debydrated blackberry, it was also made tasting tests taking into account three parameters: color, scent and favor, to determine the acceptance or rejection of the product. The results reflected that by means of the process of dehydration the quantty of yeasts diminishes considerably, since to a high temperature as $0*C he/she decreases the proliferation of the same ones for the decrease of the activity of water and pH less acid. You concludes that in the process of dehydration the anthocyanes is quite resistant to the heat, and vitamin C is thermos sensitive by the suffer an loss lessen vitamin such temperature. The sensorial analysis of he dehydrated product own an acceptance of +55 in the aspect of color of +39 in the cent and of +25 in the flavor demonstrating that the product has a favorable acceptance. lis recommended to carry out other parameters of control of quality like are the minerals and others pigments as carotenes, this with the purpose of achieving wider information of the product so much nutitional as toxies (toxic elements, P, Cd)"
Resumen : En el presente trabajo de investigación se realizó la evaluación nutricional de la mora (Rubus glaucus B.) fresca y deshidratada a partir de la determinación de antocianos y vitamina C como indicadores de eficiencia del proceso de deshidratación con la finalidad de reducir al máximo la pérdida de nutrientes y prolongar el período de vida útil. Se utilizó mora fresca. secador en bandejas, espectrofotómetro, PHLC para la investigación, utilizandom el método científico inductivo-deductivo, analítico-sintético y experimental, se aplicaron diferentes técnicas como son: determinaciones físicas, composición bromatológica y determinaciones microbiológicas, obteniéndose como resultado la mora deshidratada a tres temperaturas, es así que a 80 oC presentó una concentración de 3936,76 mg/100g de antocianos y 402.71 mg/100g de vitamina C, mientras que a 90 oC la concentración de antocianos es 2898.09 mg/100g y 65.81 mg/100g de vitaina C y a 70 oC tuvo una concentración de antocianos de 2456.69 mg/100g y 7.58 mg/100g de vitamina C, reportando una menor pérdida de estos indicadores a la temperatura de 80 oC. Además se realizó la evaluación nutricional y microbiológica de la mora fresca y deshidratada, por lo que se comprobó que debido a la ausencia de agua libre, la concentración de los solutos aumentó determinándose un mayor valor nutritivo en el deshidratado y la cantidad de levaduras desminuyó considerablemente. También se realizó pruebas de degustación en la mora deshidratada, tomando en cuenta tres parámetros: color, olor y sabor, alcanzando una aceptación de + 55 en el aspecto de color; de + 39 en el olor y de + 25 en el sabor, demostrando que tiene una aceptación favorable. Además se debería analizar otros parámetros de control de calidad como minerales y pigmentos tales como los caratenoides con la finalidad de obtener información más amplia del producto tanto nutricional como toxicológica (elementos tóxicos: Pb, Cd).
