Abstract : The rehydration study in dehydrated tree tomato (Solanum betaceum cav) was carried out in the laboratories of Food, Biochemistry, Microbiology and Instrumental, Sciences, ESPOCH in order to establish optimal conditions of time, temperature and rehydrating liquid that allow reaching characteristics sensory and nutritional similar to fresh fruit; experimental and inductive-deductive method was applied. Analyzes were performed using spectrophotometry, HPLC, and other analytical methods. The fruit was dehydrated, continuing with its rehydration in three liquids: water, water with glucose and water with ascorbic acid; at three different temperatures: 20º, 30º and 40ºC. A temperature of 40º C, a time of 15 minutes and water as the best rehydrating liquid were obtained as optimum. The rehydration and water retention capacity helped to determine the behavior of the tree tomato, as the rehydration capacity increases, the water retention capacity decreases, which is due to the temperature used. Regarding the nutritional content, the rehydrated tomato presents a slight increase in ashes, protein, and fiber due to the difference in the percentage of moisture. While components such as vitamin C and carotenoids are reduced, due to their instability against physical factors of rehydration. When comparing the histological section of the fresh tree tomato, and rehydrated there is no major difference between them, the cellular structures were similar, reaching the conclusion that the established conditions are optimal. It is recommended to have strict control of time and temperature for correct rehydration, avoiding damage to plant tissues, which makes the final product unpleasant.
Resumen : El estudio de rehidratación en tomate de árbol (Solanum betaceum cav) deshidratado se realizó en laboratorios de Alimentos, Bioquímica, Microbiología e Instrumental, Fac. Ciencias, ESPOCH con el fin de establecer condiciones óptimas de tiempo, temperatura y líquido rehidratante que permitan alcanzar características sensoriales y nutricionales similares a la fruta fresca; se aplicó método experimental e inductivo-deductivo. Los análisis se realizaron utilizando espectrofotometría, HPLC y demás métodos analíticos. Se deshidrató la fruta, continuando con su rehidratación en tres líquidos: agua, agua con glucosa y agua con ácido ascórbico; a tres temperaturas diferentes: 20º, 30º y 40ºC. Se obtuvo como óptimos una temperatura de 40º C, tiempo de 15 minutos y el agua como mejor líquido rehidratante. La capacidad de rehidratación y de retención de agua ayudaron a determinar el comportamiento del tomate de árbol, a medida que aumenta la capacidad de rehidratación, disminuye la de retención de agua que se debe a la temperatura usada. En cuanto al contenido nutricional ,el tomate rehidratado presenta ligero aumento de cenizas, proteína, y fibra debido a la diferencia en el porcentaje de humedad. Mientras que se ven disminuidos componentes como, vitamina C y carotenos, debido a su inestabilidad frente a factores físicos de la rehidratación. Al comparar el corte histológico del tomate de árbol fresco, y rehidratado no existe mayor diferencia entre ellos, las estructuras celulares se mostraron similares, llegando a la conclusión de que las condiciones establecidas son las óptimas. Se recomienda tener estricto control del tiempo y la temperatura para una correcta rehidratación evitándose daños en los tejidos vegetales, que tornen al producto final desagradable.
