dc.descriptionEl objetivo de esta investigación fue preparar microcápsulas de apigenina mediante el método de coacervación compleja. Se determinaron la solubilidad del activo en tres diferentes vehículos oleosos (aceite de ricino, almendra y oliva) mediante espectrofotometría en comparación con un estándar, el rendimiento en peso de las microcápsulas obtenidas a partir de 9 diferentes tratamientos en los que se variaron las proporciones de polímeros, concentración de agente reticulante (transglutaminasa TG) y volumen total de reacción, la eficiencia de encapsulación de las m icrocápsulas obtenidas y la higroscopicidad de las microcápsulas de los lotes válidos. El vehículo oleoso en el que presenta mejor solubilidad el activo corresponde al aceite de ricino (14.146±0.05 ppm), el tratamiento que presentó mayor rendimiento en peso de microcápsulas fue el C5 (3.842 g) (apigenina disuelta en aceite de ricino 4 mL, proporción gelatina y goma arábiga 1:1, concentración de TG 15 U/g de gelatina, volumen total de reacción 100 mL), el que presentó mayor eficiencia de encapsulación fue C8 (82.52%) (apigenina disuelta en aceite de ricino 4 mL, proporción gelatina y goma arábiga 2:1, concentración de TG 15 U/g de gelatina, volumen total de reacción 75 mL). Por último, el tratamiento que tuvo un valor inferior de higroscopicidad fue el C4 (11.58%) (apigenina disuelta en aceite de ricino 2 mL, proporción gelatina y goma arábiga 1:1, concentración de TG 30 U/g de gelatina, vol umen total de reacción 100 mL). El mejor desempeño en términos de solubilidad de apigenina fue el asociado al aceite de ricino. La eficiencia de encapsulación tiene su mejor valor al tener proporciones gelatina y goma arábiga 2:1 y valores de concentración de TG 15 U/g de gelatina. Sin embargo, la higroscopicidad en estas condiciones tiene un comportamiento intermedio del 16% aproximadamente. Se sugiere realizar el estudio de liberación de apigenina desde las microcápsulas obtenidas.es_ES
dc.description.abstractThe objective of this research was to prepare apigenin microcapsules by the complex coacervation method. The solubility of the active ingredient in three different oily vehicles (castor oil, almond and olive oil) was determined by spectrophotometry compared to a standard, the weight yield of the microcapsules obtained from 9 different treatments in which the proportions of polymer s, concentration of crosslinking agent (TG transglutaminase) and total reaction volume, the encapsulation efficiency of the microcapsules obtained and the hygroscopicity of the microcapsules of the valid batches. The best performance in terms of solub ility of apigenin was that associated with castor oil. The encapsulation efficiency has its best value when having proportions of gelatin and gum arabic 2: 1 and concentration values of TG 15 U / g of gelatin. However, hygroscopicity in these conditions has an intermediate behavior of approximately 16%. It is suggested to perform the apigenin release study from the obtained microcapsules.es_ES
