dc.descriptionSe realizó el análisis microbiológico y la resistencia a antibióticos de las bacterias aisladas de la leche cruda de bovino expendida en la Empresa de Lácteos “La Herencia” en San Andrés y en la empresa de lácteos “Santa Fe” en Tunshi. La recolección y transporte de las muestras evaluadas en cada uno de los muestreos se efectúo de acuerdo a lo establecido en la Norma NTE INEN 0004. Los indicadores microbiológicos que se analizaron para determinar la calidad higiénico-sanitaria fueron, Escherichia coli, Staphylococcus aureus, Brucella por medio de Placas Petrifilm 3M, en el caso de la Escherichia coli y Staphylococcus aureus, y cultivo en agar Farrell en el caso de Brucella, verificando la existencia de las bacterias por medio de pruebas confirmatorias como la prueba de la oxidasa, siembra en agar azul de metileno, tinción Gram y Kit MicrogenTM GN-ID Identificación. El recuento de Escherichia coli, sobrepaso los límites permitidos según el Reglamento Técnico RTCR: 401-2006 en el 100% (6/6), ya que los valores obtenidos en el recuento van de 3000 UFC/mL a 102333,3 UFC/mL y la cantidad estándar máxima permisible para esta bacteria es de 100 UFC/mL. El conteo de Staphylococcus aureus resultó ser superior al valor de referencia (máximo 500 UFC/mL) oscilando entre 23.333 UFC/mL y 58.666 UFC/mL. Las pruebas confirmatorias como la coagulasa, siembra en agar manitol salado, tinción Gram y Kit MicrogenTM GN-ID Identificación, coincidieron con el crecimiento en placas Petrifilm para Staphylococcus. En el caso de la Brucella no hubo crecimiento (0/9) en el agar modificado de cerebro-corazón con suplemento selectivo para el aislamiento de Brucella. El perfil de resistencia antimicrobiana en las bacterias identificadas se realizó por el método de difusión en agar según Kirby Bauer. Escherichia coli demostró ser resistencia frente a ampicilina, de la misma manera un 33,3 % (1/3) lo fue a la Tetraciclina y un 33,3 % (1/3) a la estreptomicina respectivamente, el 100% de Escherichia coli fueron sensibles frente a gentamicina y nitrofurantoína y kanamicina. Staphylococcus aureus fue resistente únicamente a penicilina y el 100% de ellas mostraron sensibilidad ante ciprofloxacino, clindamicina, amikacina, tetraciclina, cefoxitin y eritromicina. Se concluyó que la calidad bacteriológica de la de leche cruda comercializada es defectuosa, y que los microorganismos presentaron mayor resistencia a los antibióticos ampicilina, estreptomicina, tetraciclina y penicilina. Se recomienda al Ministerio de Salud y organismos encargados realizar en forma permanente la capacitación y control con personal técnico y capacitado, para proteger la salud pública y tener productos de calidad.es_ES
dc.description.abstractA microbiological analysis and antibiotic resistance of bacteria isolated from raw milk of bovine expended in the dairy Company "La Herencia" in San Andrés and the dairy company "Santa Fe" in Tunshi was performed. The collection and transport of samples evaluated in each one of the samples was conducted in accordance with the provisions of the Standard NTE INEN 0004 standard. The microbiological indicators which were analyzed to determine the hygienic-sanitary quality were, Escherichia coli, Staphylococcus aureus, Brucella by Petrifilm plates 3M, in the case of Escherichia coli and Staphylococcus aureus, and agar culture Farrell in the case of Brucella, verifying the existence of bacteria through confirmatory tests as the test of oxidase, seed in agar methylene blue and Gram staining kit MicrogenTM GN-ID identification. The count of Escherichia coli, exceeded the limits allowed under the Technical Regulations RTCR: 401-2006 in 100% (6/6), since the values obtained in counts range of 3000 CFU / mL to 102,333.3 CFU / mL and the standard amount maximum allowable for this bacteria is 100 CFU / mL. Staphylococcus aureus count turned out to be higher than the reference value (maximum 500 CFU / mL) ranging from 23,333 CFU / mL and 58,666 CFU / mL. Confirmatory tests such as coagulase, mannitol salt agar, Gram staining and Kit MicrogenTM GN-ID identification, coincided with the growth of Staphylococcus Petrifilm plates. For Brucella was no growth (0/9) in the modified agar brain - heart with selective supplement for the isolation of Brucella. The profile of antimicrobial resistance in bacteria identified was performed by the agar diffusion method according to Kirby Bauer. Escherichia coli showed resistance to ampicillin, in the same manner 33.3% (01/03) was the Tetracycline and a 33.3% (01/03) to the respectively streptomycin, 100% of Escherichia coli were sensitive to kanamycin and gentamicin and nitrofurantoin. Staphylococcus aureus were resistant only to penicillin and 100% of them showed sensitivity to ciprofloxacin, clindamycin, amikacin, tetracycline, erythromycin and cefoxitin. It was concluded that the bacteriological quality of raw milk marketed is defective, and the microorganisms showed higher resistance to antibiotics as: ampicillin, streptomycin, tetracycline and penicillin. It is recommended to the Ministry of Health and agencies perform to have a permanent training and control with technical and trained personnel to protect public health and to have quality products.es_ES
