dc.description | Se realizó el análisis de la calidad nutritiva y sanitaria de la mashua endulzada; para elaborar tres productos: galleta, helado, mermelada; cada uno con tres formulaciones diferentes con sus respectivos testigos para escolares del proyecto "RUNA KAWSAY" de la FAO - Ecuador. Para la elaboración de estos productos se utilizo la mashua debido a que tiene un contenido alto de almidón, un balance apropiado de aminoácidos esenciales y es rico en vitaminas C y B. En base a los estudios se determino que posee: humedad 73.2%, Ceniza 5.5%, fibra 7.3%, proteína 9.5%, Extracto eterio 0,6%. Se procedió a elaborar los tres productos y se sometieron a pruebas de degustación. La galleta con proporción 40:10:50 presento mayor porcentaje de aceptabilidad (79%) y sus componentes nutritivos analizados son: humedad 3.2%, Ceniza 1,15%, fibra 0.6%, proteína 10.8%, Extracto eterio 12.5%. Aportando con un porcentaje mayor al requerimiento diario recomendado de proteína y fibra. El helado con proporción 40:10:50 presento un porcentaje de aceptabilidad (86%) y sus componentes nutritivos analizados son: humedad 25,67%, Ceniza 0,68%, fibra 0,62%, proteína 3,47%, Extracto eterio 1.68%. Aportando con un con un porcentaje superior al requerimiento diario recomendado de proteína. La mermelada con proporción 40:0:60 presento un porcentaje de aceptabilidad 91% y sus componentes nutritivos analizados son: humedad 24%, Ceniza 2.9 %, fibra 0.87 %, proteína 0.93%, Extracto eterio 0.12%. Aportando con un porcentaje mayor al requerimiento diario recomendado de fibra. Se sugiere que estos alimentos sean utilizados como parte del desayuno escolar debido a que aporta un alto contenido nutricional lo que ayudara a mejorar la nutrición y se pueda tener muchos beneficios tanto en la alimentación como también en nuestra salud. | es_ES |
