Abstract

The objective of this research was to design a proposal for a management system for a chocolate line based on the ISO 9001: 2015 standard, for the COCOA PROCESSING PLANT belonging to the Association of Group of Producers of San Gerardo Echeandia, in which a diagnosis of the current state of the association was made through the use of techniques such as PEST that allowed the identification of external macro-environmental factors; and the SWOT analysis that identified positive factors. The critical points were identified by means of the Pareto Diagram, in which an insufficient cold line was obtained, and is the main cause of the problems in the product, followed by the small thermometer, in addition, through the matrix of dangers, preventive measures were determined to reduce risks. present and future. The simulation of the production of the candy line was carried out using the ProModel software, identifying entities, quantities, times and processes. Finally, the cost-benefit analysis was carried out, resulting in the proposed project being feasible, giving a value of 1.07, which represents that the project generates benefits of 7%.
