Sistematización de la información técnico científica sobre optimización de procesos agroindustriales en las universidades del Ecuador.

Abstract

The purpose of this research was to systematize the technical-scientific information on the optimization of agro-industrial processes in the universities of Ecuador, which have Agribusiness Engineering, Food Engineering, and Chemical Engineering degrees, considering the research published from 2015 onwards. For this purpose, it was necessary to collect bibliographic information on the relevant subject, as well as to analyze the most significant and congruent information considered by the authors and their keywords. The methodology applied for the systematization of the information was based on the search for research according to the key terms, where the recovery and arrangement of the experience reported in the literature under inclusion criteria were used. After the bibliographic compilation, it was obtained thirty-four studies optimization-related to agro-industrial food processes and classified into the following topics and subtopics: Strategic planning: quality control with one study; production planning: raw material, resources with 5 and 10 investigations, respectively. Process units, with unit operations and energy finding 16 and 2 papers, respectively. In addition, the academic database is established in Microsoft Access software, which is easily accessible to the user and designed to represent any database, so it is available to any researcher. It is recommended to conduct further research on the optimization of agro-industrial processes, as well as the systematization of topics within the agro-industrial area.
